Protein Pancakes



Protein pancakes 

  • 1/2 cup rolled oats (50 grams)
  • 1/4 cup vanilla protein powder(30 grams)* (see notes based on protein powder used)
  • 1 tablespoon coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/2 small-medium ripe banana(50 grams)
  • 1 large egg
  • 2 Tbsp Greek yogurt plain
  • 1/4 cup milk * (see notes based on protein powder used)
  • oil or butter for cooking
Combine wet ingredients first the. Add dry ingredients. Scoop onto buttered griddle heated to 300-325 degrees. Flip when edges begin to dry out slightly. 
  • toppings: maple syrup, banana, berries, chocolate chips, nut butter…

Time: 30 minutes

Japanese soufflĂ© pancakes start with the same ingredients as American varieties — namely, eggs, flour and milk — but they tower above traditional diner versions thanks to the addition of extra egg whites. A meringue mixture is beaten to stiff peaks, then folded into the batter, which cooks directly in metal pastry rings to help the pancakes attain their distinctive height. The key is to cook the batter at a very low temperature. If your stove has a small burner, or an especially low heat setting, use it here to create these custardy pancakes, worthy of breakfast, an afternoon snack or even dessert.

Ingredients

Yield: 8 pancakes
  • 4egg whites and 2 egg yolks from 4 large eggs, separated and chilled
  • 6tablespoons granulated sugar
  • 2teaspoons vanilla extract
  • 1teaspoon baking powder
  • 6tablespoons cake flour
  • ¼cup milk, chilled
  • ½teaspoon fresh lemon juice
  • ½teaspoon kosher salt
  • Unsalted butter, for greasing and serving
  • Maple syrup, for serving
  • Confectioners’ sugar, whipped cream and fresh berries, for serving (optional)

Preparation

  1. Step 1

    Place egg whites in the bowl of a stand mixer or a medium bowl; set aside. Place egg yolks in a large bowl. Add 1 tablespoon granulated sugar, the vanilla and baking powder to egg yolks and whisk until blended. Add flour and milk; whisk until fully combined.

  2. Step 2

    Add lemon juice and salt to egg whites. Using a stand mixer fitted with the whisk attachment or a hand mixer, whip mixture on medium speed until foamy, about 1 minute. Continue to whip over medium while gradually sprinkling with remaining 5 tablespoons granulated sugar. Turn speed to high and whip until stiff, glossy peaks form and mixture doubles in size, about 1 minute. Take care not to overbeat meringue.

  3. Step 3

    Heat a lidded nonstick skillet over the lowest heat setting and set the lid aside.

  4. Step 4

    Using a rubber spatula, scoop about ⅓ of meringue into egg yolk mixture and gently fold almost combined. Repeat with half the remaining meringue until almost combined, then fold in the remaining meringue just until no streaks remain.

  5. Step 5

    Carefully grease the warm skillet and the inside of four 3-inch-wide pastry rings (they should be at least 1½ inches tall) using the butter. Check the heat of the pan by sprinkling a bit of water in it: Droplets should steam off the surface, but not dance or sputter. Place the greased pastry rings in the warm pan and ladle a scant ½ cup batter into each ring. Place lid on top of skillet and cook pancakes on very low heat until they start to rise and a few small bubbles start to form on top, 3 to 4 minutes.

  6. Step 6

    Remove lid, carefully slide a flat spatula underneath each pancake and position another spatula on top, then gently flip pancakes in their rings. Immediately replace lid and cook until pancakes are cooked through and spring back to the touch, 2 to 3 minutes. Transfer cooked pancakes to a platter, grease the skillet and pastry rings and repeat to make 4 additional pancakes.

  7. Step 7

    Top pancakes with a pat of butter and drizzle with maple syrup; serve immediately. Serve with any combination of confectioners’ sugar, whipped cream and berries, if desired.

  Handmade Tortillas

Ingredients:

3 Cups all purpose flour (400 grams)     ----]  Scoop flour into measuring cup w/ spoon
2 tsp baking powder (7.5 grams)                ]  level off add bkg pwd and salt whisk/blend
1 tsp salt (5 grams)                             ]  Scoop packed lard from measuring cup
1/3 Cup Lard or shortening (65 grams)    ----] 
3/4 Cup + (1/4 Cup add as needed) Hot water      Heat water 1 min pour over lard
 
Mix all with both hands dough should be moist and tacky so may need to keep adding small amounts of water to keep it.  Do not knead on floured counter. Push dough and fold over on self stretching and working it for 5 minutes. It should still be a little sticky to hands. If dough is too wet add 1 Tbsp at a time or if its too dry add from the reserved 1/4 cup water 1 Tbsp at a time. Dough should be a little sticky and elastic in texture. 
 
Break into 12 to 14 balls and knead them into a round smooth ball tucked on bottoms. Set into bowl and place moist paper towel over the balls let rest on counter for 15 minutes to let gluten relax. 
 
Roll out on lightly floured counter to thin out into a circle careful not to get too thin but not thick.
 roll out 3 at a time and let rest as current one cooks

Heat cast iron skillet on medium to medium low heat. Cook til dough bubbles and changes color slightly as it dries and is golden in color turn and brown other side.

Brioche Bread








Brioche Bread

Makes 2 loaves, total time 4 1/2 hours

INGREDIENTS
FOR THE SPONGE
1 c. all-purpose flour
(0.25-oz.) packet or 2 1/4 tsp. active dry yeast
1/2 c. milk, lukewarm


  1. Make the sponge: To the bowl of a stand mixer fitted with the hook attachment, add 1 cup flour, yeast, and milk. Using a spatula, mix until well combined, then cover with plastic wrap and let sit for 45 minutes. 
FOR THE DOUGH 
large eggs, room temperature
     1 c. all-purpose flour  
     2 c. bread flour            
1/2 c. granulated sugar
2 tsp. kosher salt


  1. Once the sponge has formed some air pockets, add in eggs, remaining 3 cups flour, sugar, and salt. Mix on medium speed until well combined, then gradually increase to medium-high speed and continue mixing until dough pulls away from the sides of the bowl and becomes shiny and elastic, scraping down bowl every 4 to 5 minutes, 10 to 13 minutes.
Set timer to 10 minutes and add 1 Tablespoon at a time
1 c. (2 sticks) butter, softened, 
plus more for pans


  1. With the mixer running, add in butter gradually, 1 tablespoon at a time, letting each tablespoon fully incorporate into the dough before adding the next, 13 to 15 minutes. Continue mixing on medium-high speed for 5 to 7 minutes until the dough passes the windowpane test. Cover bowl with plastic wrap and let rest about 1 hour or doubled in size.
FOR THE EGG WASH

  1. To bake same day: Once dough has doubled in size, turn out onto a floured surface and punch down dough. Divide in half using a pizza cutter and then each half into thirds to braid each loaf.   
  2. Grease 8”-x-5” loaf pans with butter or shortening. Place braided dough into each prepared pan. Cover with plastic wrap.
  3. Preheat oven to 375°. Let dough proof until puffy and doubled in size, 1 hour to 1 hour 30 minutes. In a small bowl, whisk together remaining egg and water. Brush egg wash on top of loaf and sprinkle lightly with salt. 


How should I add the butter? Slowly and with great patience. The butter addition process should take no less than 10 minutes. If you add the butter in too fast, it will not "emulsify" into the dough and result in an oily, broken dough. It'll still bake off well enough, but do it right and your dough will look satisfyingly smooth, glossy, and plump.

How do I know when the gluten has developed properly? The windowpane test is often used to check for gluten development. To perform the test, take a small piece of dough and slowly stretch it out in opposite directions: if the dough becomes thin enough to appear semi-transparent before it tears, you're there! You'll have an extra desirable chew in the bread once your dough gets to this stage.

Should I let the dough rest overnight? It's up to you! Generally, more time means more flavor when it comes to food. If you let the dough sit in the fridge overnight, it's basically a slow fermentation that helps it develop a subtle depth of flavor. Because we're already letting some fermentation happen by using the sponge mixture, overnight proofing is not necessary if you're looking to bake right away. Or, if you're like me and love freshly baked bread straight out of the oven, bake one loaf on the day of, and save the other half of the dough to bake for the next day!


DIRECTIONS



  1. To bake next day: Once dough has doubled in size, punch down to deflate dough completely, then re-cover with plastic wrap. Refrigerate overnight until you are ready to bake the next day. Follow instructions in the next step, letting dough proof until doubled before baking, longer if needed, up to 2 hours 30 minutes.

  2. Bake until deeply golden on top and the center of the loaf registers between 190° and 205°, about 22 minutes.
  3. Let cool 5 minutes then turn loaves out onto a cooling rack. Let cool completely.

 Brown Sugar Cinnamon Monkey Bread







Melt Together in small bowl
1/4 cup sugar or brown sugar
2 tsp cinnamon
1/4 cup unsalted butter, plus more for buttering pan

24 Frozen Rhodes rolls or comparable amount of your favorite bread/roll recipe



1 cup packed light brown sugar
1/3 cup butter
1/2 tsp vanilla extract
1/2 cup chopped pecans (optional)

Preheat oven to 350 degrees.  Heavily butter a bundt pan.  Sprinkle chopped pecans evenly around the bottom of the pan (optional).

Combine the cinnamon/sugar/butter mix in a small bowl and set aside.  Cut dough into 1" chunks.  Dredge both sides in cinnamon and sugar mixture.  Continue until all biscuits are coated.   Drop coated dough into the pan, trying to keep the layers even all the way around.  Don't worry about packing them in too tightly, they'll fill in the gaps as it bakes. Drizzle remaining cinnamon butter over dough. 

In a small saucepan, melt butter and brown sugar over medium high heat.  Heat just until the edges of the sauce start to rapidly bubble and boil.  Remove from heat, stir in vanilla and pour 1/2 of the mixture over the  the rolls as you are layering them. 

Bake about 30-35 minutes until top is golden brown.  Cool about five minutes in the pan, cover with a large plate and invert. Heat remaining sugar sauce and pour over cooked rolls.   Serve warm.


Ham Egg and Cheese Pull Apart Rolls



Servings 6 servings

Ingredients

  • 9 Frozen Rhodes Rolls or your favorite roll recipe 
  • 4large eggs
  • 3 T half and half
  • 1/4 cup diced ham
  • 1/4 cup shredded cheddar cheese
  • chopped parsley or green onion optional

Instructions

Assembling Pull Aparts

  1. Grease muffin tin with nonstick baking spray. 
  2. If using Rhodes Frozen Rolls use this step I not skip to step 3. Set 9 balls of  roll dough on the muffin tin. Some muffin cups will have 2 rolls and some will have 1 roll. We're going to work that out in a minute. Let rolls sit in muffin tins for about 20 minutes, or until they are thawed enough to cut with scissors.
  3. Cut rolls in quarters, placing 6 qaurters in each muffin cup.
  4. Evenly divide diced ham and cheese and sprinkle over rolls in the muffin cups. Use your fingers to toss the rolls, ham, and cheese together a little bit. 
  5. Whisk eggs, half and half, salt, and pepper in a large measuring cup. Pour egg mixture evenly in muffin cups. Be sure to not fill them over 3/4 full. You might have more egg mixture than will fit. If so, disgard extra egg mixture. Sprinkle with chopped parsley and onion if desired.
  6. Cover muffin tin with greased plastic wrap, set on a rimmed baking sheet just incase it overflows during the night. Refrigerate overnight if using frozen dough balls  or until rolls have doubled. With fresh dough can bake after filling muffin tins.

Baking Pull Aparts

  1. Preheat oven to 350 degrees. Set muffin tins on a baking sheet just in case they overflow. Bake uncovered for 20-25 minutes.

Texas Roadhouse rolls


Ingredients:
1 cup warm milk
1 package or 2 1/4 teaspoons active dry yeast
1/3 cup sugar
3 1/2 cups all-purpose four, plus more for the board
1 egg
1/3 cup butter, melted plus 1/4 cup butter, melted (optional)
1 teaspoon salt
Honey Cinnamon Butter
1/2 cup softened butter
1 teaspoon cinnamon
2 tablespoons honey
2 tablespoons powdered sugar
Instructions :
In a cup or small bowl, stir together the warm milk, sugar, and yeast. Allow the yeast to proof and begin to activate while you prepare the other ingredients. (This is not necessary, but I prefer this to using milk cold out of the refrigerator). Using a stand mixer or food processor, combine the flour, egg, 1/3 cup melted butter, and salt. Add the milk mixture and process until you have a smooth dough; it will be stickier and wetter than regular bread dough. Place the dough in a greased bowl, turn the dough to grease all sides, and cover with a towel. Let rise until it has doubled in size. When the dough has doubled, punch it down and turn it out on a floured board. Let rest for 10 minutes. Roll out the dough into a large, flat rectangle approximately 1/2 inch thick. Cut into 16 portions with a sharp knife and place on a greased baking sheet and let rise again, until doubled. Preheat oven to 375 degrees. Bake the rolls for 10 minutes on the greased baking sheet. They will be light brown when removed from the oven. If desired you can brush the tops of the rolls with the remaining 1/4 cup melted butter before serving .
Prepare honey cinnamon butter by combining butter, cinnamon, honey, and powdered sugar until well blended.

JOJO’S BISCUITS
PREP: 20 minutes, plus at least 30 minutes chilling COOK: 15 to 20 minutes COOL: 5 minutes
Makes about 20 biscuits
  • 4 cups self-rising flour, plus more for the work surface
  • 2 tablespoons baking powder
  • 1 teaspoon baking soda
  • ¾ pound (3 sticks) salted butter, cold, cut into ½-inch pieces or grated
  • 2 large eggs, beaten, plus 1 large egg for brushing
  • 1½ cups buttermilk, or as needed, plus 1 tablespoon for brushing
  • Jam or gravy, for serving
1. In a large bowl, whisk together the flour, baking powder, and baking soda. Add the butter and use a pastry blender to cut the butter into the flour until the pieces are even and about the size of peas. 
2. Stir in the beaten eggs with a wooden spoon until combined. Stir in 1½ cups buttermilk until the dough comes together into a sticky mass. If it is too dry, add more buttermilk 1 tablespoon at a time, mixing after each addition, until it reaches the correct consistency. Cover the bowl and refrigerate for at least 30 minutes and up to overnight.
3. Position a rack in the middle of the oven and preheat the oven to 400°F. Line a baking sheet with parchment paper.
4. Scrape the dough onto a floured work surface. Use your floured hands to press it into a round roughly 14 inches across and about ½ inch thick.
5. Use a floured 2¾- inch round cutter to cut out about 20 biscuits. If necessary, collect and pat out the scraps to cut more biscuits.  
6. Transfer the biscuits to the prepared baking sheet, arranging them so that they all are touching.
7. In a small dish, beat together the remaining egg and 1 tablespoon buttermilk. Brush the mixture on the top of the biscuits. 
8. Bake until golden brown, 15 to 20 minutes. Let cool slightly in the pan on a rack.  
9. Biscuits are best the day they are made (and ideally fresh out of the oven!). Serve with strawberry jam or gravy, if desired. Store leftovers in an airtight container at room temperature for up to 2 days.
NOTE: For longer storage, arrange the biscuits about ½ inch apart on two parchment-paper-lined baking sheets and freeze until solid. Transfer them to a zip-top plastic bag and freeze for up to 2 weeks. There is no need to thaw them before baking.

Naan bread

Ingredients:

Proofing yeast:

  • 1 cup warm water
  • 2 Tbsp honey
  • 2 1/4 tsp active dry yeast
Combine water and honey in the pyrex measuring glass stir until honey has dissolved. Add the yeast and stir to moisten. Set aside 5-10 minutes.  Pour into the bowl of a stand mixer.

Mixing:

  • 1 egg
  • 1/2 tsp baking powder
  • 2 tsp salt
  • 1/4 cup yogurt
  • 3 1/2 cups all-purpose flour 
Add to the yeast liquid these ingredients on low speed. Once the ingredients start to come together turn the speed to medium and continue mixing dough for 2-3 minutes, until dough starts looking smooth. It will be slightly sticky, but pull away from the sides forming a ball.

Rise Dough:

Pre-warm the oven to 200 degrees and turn off. Place in the oven 2 cups boiling water in a glass container. Place the dough in a greased bowl big enough for it to double in size and cover with a moist towel. Let rise for an hour. 

Rolling and Shaping Dough:

Once the dough has risen transfer it to a floured work surface, separate into equal size balls roughly 1 1 1/2" and roll out each to a little less than 1/4" thick.  

Grilling Bread:

Melt butter to brush on rolled out dough. Place on pre-heated skillet or cast iron griddle and cook a few at a time for 1 minute until dough begins to bubble on the top and the bottom is golden brown. Flip and cook 2nd side til browned. Keep cooked Naan warm while cooking remaining dough. 

Serve:

Delisceous with Chicken Tikka Masala or toasted. 

Lemon Blueberry Bread

Combine in a bowl and set aside:

1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp salt

In an electric mixing bowl combine:

1/3 cup unsalted butter, melted
1 cup sugar
2 eggs
1/2 tsp vanilla
2 tsp fresh grated lemon zest
2 Tbsp fresh lemon juice
1/2 cup milk
1/8 to 1/4 tsp almond extract

Slowly add dry ingredients while mixing continuously until it is just combined, don't over mix.

Before adding blueberries rinse, mostly dry and shake in a bag with flour to coat. This prevents them from settling at the bottom of the loaf while baking.

1 cup fresh or frozen blueberries
1 Tbsp flour
*optional 1/2 cup fresh raspberries rinsed

Gently mix blueberries into batter by hand and pour into prepared loaf pans.

Glaze:

2 Tbsp butter, melted
1/2 cup powdered sugar
2 Tbsp fresh lemon juice
1/2 tsp vanilla extract

Instructions:

1. Preheat oven to 350 degrees
2. Grease and flour or line a 9" x 5" loaf pan with parchment paper.
3. Bake 55-65 minutes large loaf or 30+ minutes for smaller loaves, until toothpick inserted comes out clean.
4. Cool and glaze.

Great Harvest Pumpkin Chocolate Chip Bread

Combine in large bowl and set aside:

3 1/2 cups white flour
2 cups white sugar
2 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1 tsp salt

Cream together in mixer:

2 cups cooked or canned pumpkin
1/2 cup oil
1/2 cup applesauce
4 eggs, beaten lightly
1 tsp vanilla
1/3 cup water
1/2 cup semi-sweet chocolate chips
1 cup milk chocolate chips

Instructions:

1. Preheat oven to 350 degrees.
2. Grease and flour 2 large or 4-6 small bread pans.
3. Slowly add dry ingredients to pumpkin mixture while mixing continuously.
4. Add chocolate chips and immediately pour batter into prepared bread pans.
5. Bake large pans 55-65 minutes smaller pans check after 30 minutes, done when toothpick comes out clean.
6. Loosen and remove from pans. (Large loafs may need to cool in pans to finish cooking)
7. Store in airtight container.
