waffle cone/bowl



1 egg
1 egg white
1/2 cup sugar
1/4 tsp salt
2/3 cup flour
2 Tbsp melted butter

Mix all together until smooth. This is a thick batter. Would be easiest if you have a hot iron(like a waffle iron) designed for making these. I don't have one (yet). So I used a frying pan. Make sure pan is hot before putting batter in it. Spread thin with the back of your spoon (this was a tricky thing as the batter is very thick and slips easily in the pan). Cook on each side until golden brown. Roll into cone shape or place on bottom of muffin tin to form into a bowl. Let cool completely and enjoy with a scoop or tow of icecream.

Ice cream sandwich cookie


Take one of your favorite cookies and place it bottom side up, take a scoop of softened icecream and smooth it onto the cookie, top with remaining cookie so the top of the cookie is facing you, place in freezer until hardened.

When ready to eat them they are a fun treat.

Ice cream in a bag




This is a fun, fast treat that was a pleaser with the kids and I have to say not a bad quick icecream.

In a pint size ziplock bag place
1 Tbsp sugar
1/2 cup milk or half and half
1/4 tsp vanilla

Revmove as much air as possible and place this bag into a gallon size ziplock bag filled 3/4 of bag with ice and add to this 6 Tbsp rock salt. Again remove as much air as possible and seal bag. Take a towel and massage the ice around the smaller bag which mixes the ingredients and ensures even freezing. This takes about 5 minutes and your hands will appreciate the towel so they don't freeze too. I recommend crushing fruit also and don't put in as much as I did.

If you want flavored icecream add your choice after the icecream has thickened and is ready to serve.

carmel topping
chocolate topping

Frozen Fruit Squares













Crust

2 cups crushed vanilla wafers
1/4 cup margarine or butter melted

Combine first two ingredients and press down into the bottomof an 8 inch container.

Filling

1 quart softened vanilla ice cream
8 oz reduced fat sour cream
1 tbsp grated lemon peel
2 cups fresh or frozen unsweetened red raspberries, blackberries, blueberries, or small whole strawberries

In large bowl stir together ice cream, sour cream and lemon peel. Gently fold in fruit. Carefully spoon over wafer mixture in dish, smoothing top. Sprinkle with remaining wafer mixture.

Cover and freeze at least 4 hours or until firm.

Let stand at room temperature for 15 to 20 minutes before cutting. Cut into squares.

aprox 9 servings
