Ingredients
  • 3 large chicken breasts cooked and shredded
  • 6 oz cream cheese softened
  • 1/3 cup sour cream
  • 1/2 cup salsa or diced tomatos with diced onion and cilantro
  • 1 1/2 cups colby jack or mexican blend cheese
  • 1 1/2 cups baby spinach chopped/stems removed (optional)
  • 12 6 inch corn tortillas

Instructions

  1. Heat oven to 350 degrees.
  2. In a large bowl mix together the chicken, cream cheese, sour cream, salsa, co-jack. Add salt and pepper to taste.
  3. Bake 20-25 min til warm inside.

Serving Suggestions

Serve with sliced lettuce and quacamole and fresh salsa.
